澳門唐餅文化研究

澳門唐餅指的是流傳在澳門社會的中式餅食。餅食作為中華飲食文化的一個重要部份,在漫長的歷史發展過程中,衍生出使人果腹以外,更多的社會性功能, “唐餅製作技藝” 被澳門文化局列為 “非物質文化遺產清單” 中的項目,足見當中涵藏著重要的文化價值。本文旨在研究在澳門範圍內,與唐餅有關的文化及社會現象,具體包括澳門唐餅的定義問題、唐餅在澳門民間文化中的蹤跡、澳門唐餅鋪的經營情況,以及澳門唐餅製作技藝的體現及流變等,期望藉此揭示唐餅這種傳統的中式食品,在當代澳門社會中所具有文化價值。

Pastry is an important component in Chinese traditional dieting culture. It’d developed kind of social functions within the history, Confection of Chinese Pastries have been included in the Inventory of Intangible Cultural Heritage by Cultural Affairs Bureau of Macau, it’s indicated that contain some important cultural values. The aim of the research is to reveal the details of those values by studying the definition, the relationship between it and folk culture, the operational situation of Bakery and production skills of it in Macau.
